Sweet Potato Gnocchi

I love gnocchi & sweet potato and I wanted to make a healthier version of gnocchi. So I made this I made two versions of this recipe one I did plain and the second I infused with fresh basil both were excellent. This recipe is super simple I tell you how to make fresh gnocchi and then turn it into a delicious, simple, and healthy dish for lunch or dinner.   • Cook: 25 mins
  • Yields: 2 Servings
sweet potato gnocchi

Ingredients

1 cup Cooked Sweet Potato

1/2 cup Unbleached Flour

1/2 cup Basil

4-5 Baby Portobello Mushrooms

1 tsp Fresh Garlic

Salt & Pepper to taste

Directions

1Bake a sweet potato for 45 minutes at 400 degrees allow to cool and scoop sweet potato and discard skin

2Make a little mound of sweet potato and add flour in the middle and using a fork knead flour into sweet potato, you will want to season here as well to work it in

3Once a dough is formed cut into pieces and drop into boiling water until they float to the top about 7 minutes

4In a pan sautee baby portobellos for a few minutes add garlic throw in the gnocchi, fresh garlic, and basil toss together and plate

5Enjoy!

Another option you can do is chop the basil and add it to your gnocchi dough so it is basil infused!

Mmm!! Who doesn't love chocolate this easy and amazing chocolate fudge cake is free from flour, dairy, and added sugar! It is so easy and so delicious and is packed with healthy ingredients & nutrients! The star of this cake is a sweet potato & banana puree that naturally sweetens without adding sugar and packs this cake with Vitamin A, Vitamin B, and Fiber. I worked on perfecting this recipe over a few weeks and had friends try it to make sure 🙂 . This is definitely one recipe I will make again and again. Ingredients

1 cup Sweet Potato

1/2 cup Nut Butter I used Peanut Butter

1/2 Over Ripe Banana

1 tsp Vanilla

Optional - Berries for the top for your cake

Directions

1Pre-heat oven to 350 degrees then In a food processor blend together sweet potato, banana until it is a puree

2In a medium mixing bowl add puree, cocoa powder, vanilla extract, and peanut butter mix together until it forms a thick but smooth batter

3Bake for 12-15 minutes then let cool in the fridge for at least 2 hours to set & enjoy!

As I have grown up as a child in the 90’s many marketing campaigns came out to increase our consumption of many foods that turn out not to be good for us. In this article, I am going to talk about those foods that have been pushed in the media and marketed to us and uncover the truth behind them and the effects they have on your body. What we eat is big in how we feel every day and down the line so being aware of what you consume is important. So here we go hope you learn and enjoy this read!

The lies we are sold about dairy

Dairy is absolutely terrible for you unless you are a baby calf.
If you remember in the 90’s the Got Milk ad’s were out in full force and telling us to drink dairy and you will have strong bones, get calcium and vitamin D and many more lies. Dairy has never been proven to provide these benefits. It has actually been proven to do the exact opposite such as leaching calcium from your bones, 75% of people in the WORLD are lactose intolerant our bodies are not made to digest dairy products. Consumption of dairy can actually increase your risk for cancer, cause anxiety, increase your risk for heart disease, aggravate IBS & other digestive issues, and much more. Nowadays there are so many non-soy dairy free Milk’s, Yogurts & Cheese’s that there is no excuse to not cut back if not fully eliminate dairy from your diet.

When you cut dairy out you will start to notice that you are:

  • No longer bloated for no reason
  • You feel lighter & have more energy
  • You produce less mucus
  • If you are a woman your cramps and pains during menstruation are reduced significantly if not completely eliminated as well as reduced hormonal side effects
  • If you have acne you will see a big difference and clearing up of your skin
  • and finally, you may lose a few pounds.

Sucralose (AKA Splenda) & Aspartame

When Splenda hit the shelves it was supposed to be a god send for diabetics and people trying to cut back on sugar but in all reality, it was another gimmick with fatal consequences. Sucralose is actually just chlorinated sugar. In large doses, chlorine can be harmful and a major threat to our health.

Sucralose has been shown to:

  • Increases weight gain and fat storage
  • Increases your appetite
  • Increases cravings for carbohydrates
  • Cause Headaches
  • Prevents absorption of medicines
  • Allergies such as acne, rash, anxiety, swelling, and much more

As for Aspartame, there have been numerous studies that have shown it to have possible links to cancer but that is not all aspartame is notorious for.

Aspartame is also known to cause:

  • Birth Defects
  • Emotional disorders
  • Diabetes
  • Epilepsy & Seizures

Most of these go unnoticed because of lack of education and that most people fail to associate their symptoms with use of these sweeteners. There are also many researchers that have spoken out against the dangers of these sweeteners as well as backed it up with research. I can personally attest to sucralose making you Ill I  ate a fit crunch bar and got a seething migraine an hour after consumption. I avoid these at all costs if I have to buy something processed I always check the label.

Artifical Dyes Blue #1,Blue #2,Citrus Red #2,Green #3,Red #3,Red #40,Yellow #5 & #6

The following dyes I am going to talk about are known to cause a variety of illnesses and issues. These dyes are found in cereal’s, candies, pet foods, beverage, makeup and drugs. Unnatural food dyes are a scary additive that is in so many different products it can be hard to avoid them altogether. Here are some facts about each dye additive and what it’s been shown to cause in animal test subjects:

  • Blue #1 & #2- have been shown to cause tumors in mice
  • Citrus Red, Red #3, Red #40- Citrus red is shown to cause tumors in mice , Red #3 is a known thyroid carcinogen and Red #40 is the most widely used color additive it is shown to cause hyperactivity in children, allergy like reactions in some people, and immune system tumors in mice.
  • Green #3 – Shown to cause bladder and testicular tumors in male rats
  • Yellow #5 & #6 – These have been shown to cause hypersensitivity reactions.  Yellow #6 might trigger hyperactivity and other behavioral effects in children.

You may ask why does it matter if those things come up in mice, mice are often used as test subjects for things we will later consume.  If you want to avoid as many artificial dyes as possible be sure to eat fresh fruit and vegetables and look for natural dyes like beet juice, turmeric etc.

“Healthy” frozen meals

Frozen meals came out in the 1950’s, but the 90’s are when the healthy food craze really was huge and they were releasing healthy frozen meals by weight watchers, healthy choice, and lean cuisine. Frozen foods are extremely processed and have many chemical additives. Frozen meals are also usually high in fat, calories, sodium, carbs, and sugar despite the healthy labels.  Just turn over a box and you could see your whole entire days worth of sodium in one meal. It is a gimmick that has been around for a long time and it is healthier and easier to cook something simple and clean rather than rely on these meals.

Soy

Soy products remember when this was the new fad and was pushed onto every product on the market? I do and I remember when it was meant to be the all the rage in eating healthier. This started around the early 2000’s when dieting seemed to come back in style heavy and everyone wanted to eat healthier. So when they started to label everything with soy or soy alternative you thought it was so healthy but over the years the risks out weigh the benefits and consuming soy too much is actually damaging. If you decide to eat soy at all stick to fermented soy products!

Some of the scary things soy contains are:

  • Phytoestrogens- Soy is higher in phytoestrogens than just about any other food source. Phytoestrogens are plant-based estrogens that mimic estrogen in our bodies. Independent research has clearly shown that consuming phytoestrogens is downright dangerous for you. Some of the things too much estrogen can do are cause breast cancer, endometriosis, uterine fibroids, infertility, and low libido.
  • Phytates- Phytates are enzyme-inhibitors that block mineral absorption in human digestive tract.
  • Goitrogenic- Soy is king of goitrogenic foods and will destroy your thyroid it prevents your thyroid from absorbing the proper amount of iodine you need to have a healthy thyroid.
  • Trypsin Inhibitors-  This is rich in trypsin inhibitors. Trypsin is a digestive enzyme we need to properly digest protein. Without enough trypsin, you’ll experience many digestive problems

*Debunking the myth that Asian people eat a lot of soy products is simple Asian people eat around 2 tablespoons of fermented soy per day which is much less than what is pushed here in the states. Fermentation also kills most of the chemicals that cause the issues soy products can cause in large amounts.

In closing, Read the sources find more sources and research for yourself as well learning about food is always a good thing to do since we need it every day for LIFE. These are things I have discovered on my journey and personally, have witnessed cutting out these products and the effect they have on your body. Remember eating clean fresh foods and making things yourself so you know what is going into the dish is always best.

Avocado! One of my favorite fruits and such a versatile ingredient. I have been using avocado to make many different things this year and this is another little recipe I came up with. I am trying to stop buying any pre-made dressings and things like that and make my own stuff. I love Mexican cuisine and I make my own fajitas and tacos and have wanted a dressing to put on that is clean, fresh, healthy, and of course TASTY! This dressing is very fresh and can go on anything. Fresh Avocado Dressing

Ingredients

2 Ripe Avocados

1/2 cup Cilantro

3-4 tbsp Minced Garlic

2 Fresh Limes Juiced

1/4 cup Water

2-3 tsp Cumin

Salt & Pepper to taste

Directions

1In a food processor add all ingredients and blend together add water and if it is still too thick for you add more until it is thinned out a bit more

2Enjoy right away or allow to sit in the fridge for at least an hour to meld flavors together

MMM! I have been craving a good sandwich & I love Philly cheese steaks but obviously, those are pretty unhealthy so here is my cleaner version of this classic sandwich. This takes about 15 minutes to make and will leave you satisfied and your taste buds happy it is also vegan and dairy free! Try this recipe & let me know what you think!

  • Yields: 1 Sandwich
Vegan Philly Cheeze Steak

Ingredients

1 Large Portabello Mushroom Cap Sliced

1 Side of Bell Pepper Green & Red cut into strips

1/4 Medium Onion Sliced

1 Sprig of Fresh Thyme

1 Hoagie or any sandwich bread of your choice

1 Daiya Provolone Style Cheeze

1 tbsp Liquid Smoke

1 tbsp Worcestershire Sauce

1 tbsp Minced Garlic

Salt & Pepper to taste

Directions

1Pre-Heat oven to 350 degrees while you wait In a Medium Skillet sautee mushrooms, peppers, and onions adding liquid smoke and worcestershire sauce

2Add Thyme and garlic towards the end of cooking and begin to assemble your sandwich add cheeze and veggies and place in oven to melt the cheese and toast the bread a bit about 5-7 minutes.

Ingredients

2 Cans of Chickpea's drained

3 Roma tomatos cut into bite sized pieces

1/4 cup Capers

1/4 cup Fresh Basil chopped

2 tbsp Minced Garlic

1/2 Fresh Lemon Juice Squeezed

4 Drizzles of Olive Oil

Salt & Pepper to taste

Directions

1In a large bowl add Chickpea's (drained, capers, tomatoes, garlic, basil and mix together then add olive oil, lemon juice, salt, and pepper stir until everything is coated.

2Allow to chill in fridge for an hour and enjoy!

April 2017 Beauty Favorites!

Hello, All I have been busy I moved, my main business is booming so I have not had the proper time to sit and blog more. But I will be getting back to the regular schedule this week! I am starting the week off with my April 2017 Beauty Favorites! I have been finding and trying many cool beauty products lately that I cannot wait to share with you. April I tried 4 stands out products that I haven’t stopped using since buying.  These products are each really great and they are all pretty affordable as well which is a win-win. So let’s get into my favorite beauty products of April…

 

1.Nia Gold Anti Wrinkle Day Serum – $7.99 at TJmaxx (if you can find it) or $65.00 on their website this serum is A M A Z I N G I used this for 4 weeks and it changed my skin for the better. This product helps to moisturize, firm, correct discoloration, and improve skin elasticity, It is very light weight and very moisturizing. My skin is dryer acne prone skin and this leaves my skin feeling so rejuvenated. No, I do not have any lines or wrinkles but I use it for the other benefits and its never too early to start a good routine :). So I highly recommend you try this serum!

2.E.L.F Highlighting HD Powder – $6.00 (I found this on the website but never in stores) So I love highlighter and was looking for a new one to try out and I was shopping on E.L.F and came across this highlighter. WOW, this highlighter is way more pigmented than their baked ones and picks up well on a good highlighter brush. I swipe the brush a few times in the pan than knock off any excess before applying and it goes on strong so watch out. If you are a highlighter junkie for $6.00 this is great definitely go to E.L.F’s site and buy one.

3.BH Cosmetics BH Liquid Lipsticks – $14.00 I am obsessed with liquid lipstick and everyone who loves me knows this! So when I saw ULTA had BH Cosmetics I was stoked because I wanted to try the liquid lips for awhile and I am glad that I did. BH Cosmetics Liquid Lipstick has a very velvety smooth formula it goes on like a dream and stays on forever. The colors are pretty I tried the color ‘Clara’ and it is my go to nude lippie. I plan to go cop more and if you love a good liquid lip you should too!

4.Hard Candy Color Correct Cushion Wonder – $6.00 To me these are a better formula than L.A Colors HD Color Correcter’s. Hard Candy has got my attention because lately whenever I try something from them it is pretty damn good for the affordability. Their newest launch has these color correctors and they work very very well! The only miss for me is that they need some color correctors for skin tones darker than mine (so medium brown tone). Besides that the peach one works for me beautifully, this color corrector really neutralizes dark spots and blends well into the skin. If you are looking to try a new color corrector try these!

quinoa & black bean fritters

Ingredients

1 Can of Black Beans (drained)

2 cups Cooked red or gold quinoa

1/2 Onion diced

1/4 cup Cilantro

1 Pabalano Pepper diced

1 Egg

1 cup any of the following Almond/Corn/Unbleached wheat flour + 2 tablespoons

1 Fresh Lime

3 tbsp Garlic

2 tbsp Cumin

1 tbsp Smoked Paprika

1 tsp Chili Powder

Salt & Pepper to taste

Directions

1Cook quinoa according to package (for extra flavor cook with vegetable stock)

2In a food processor add 1 cup of cooked quinoa, 1/2 the can of beans, onion,egg, and half the seasonings pulse together until it is sticking together a bit

3In a mixing bowl add remaining quinoa and beans + the contents of the food processor fold in peppers, flour, remaining seasonings, and cilantro

4Pre-Heat oven to 400 degrees and take a baking sheet and spray with olive oil take a small ice cream scoop and scoop about a 2 inch sized ball of the mixture and place on baking sheet and press down to make a little patty.

5Bake in oven for 20 minutes flipping once so each side gets crispy

6Enjoy

*You can eat alone or dip in salsa, guacamole, or a cilantro mayo

*You can also mix in some dairy free cheese
