1Cook quinoa according to package (for extra flavor cook with vegetable stock)
2In a food processor add 1 cup of cooked quinoa, 1/2 the can of beans, onion,egg, and half the seasonings pulse together until it is sticking together a bit
3In a mixing bowl add remaining quinoa and beans + the contents of the food processor fold in peppers, flour, remaining seasonings, and cilantro
4Pre-Heat oven to 400 degrees and take a baking sheet and spray with olive oil take a small ice cream scoop and scoop about a 2 inch sized ball of the mixture and place on baking sheet and press down to make a little patty.
5Bake in oven for 20 minutes flipping once so each side gets crispy
*You can eat alone or dip in salsa, guacamole, or a cilantro mayo
*You can also mix in some dairy free cheese
