quinoa & black bean fritters

Ingredients

1 Can of Black Beans (drained)

2 cups Cooked red or gold quinoa

1/2 Onion diced

1/4 cup Cilantro

1 Pabalano Pepper diced

1 Egg

1 cup any of the following Almond/Corn/Unbleached wheat flour + 2 tablespoons

1 Fresh Lime

3 tbsp Garlic

2 tbsp Cumin

1 tbsp Smoked Paprika

1 tsp Chili Powder

Salt & Pepper to taste

Directions

1Cook quinoa according to package (for extra flavor cook with vegetable stock)

2In a food processor add 1 cup of cooked quinoa, 1/2 the can of beans, onion,egg, and half the seasonings pulse together until it is sticking together a bit

3In a mixing bowl add remaining quinoa and beans + the contents of the food processor fold in peppers, flour, remaining seasonings, and cilantro

4Pre-Heat oven to 400 degrees and take a baking sheet and spray with olive oil take a small ice cream scoop and scoop about a 2 inch sized ball of the mixture and place on baking sheet and press down to make a little patty.

5Bake in oven for 20 minutes flipping once so each side gets crispy

6Enjoy

*You can eat alone or dip in salsa, guacamole, or a cilantro mayo

*You can also mix in some dairy free cheese

Happy St.Patricks Day! Many people love shamrock shakes including me but we all know the average one is horrible for you. This St.Patricks day made me come up with a healthy version of a shamrock shake using all healthy & natural ingredients. In this recipe, I use Chlorophyll which is what makes plants green Chlorophyll is known to have many great health benefits such as encouraging healing inside your body, protects your DNA from fried foods, promotes healthy iron levels, and is a super potent anti-oxidant. Chlorophyll does so many great things and also makes this shake green to be festive :). This shake is better than regular shamrock shakes with 1/4th of the calories and way more health benefits. Try it today !

Ingredients

1 Scoop of Cookies & Cream protein powder ( I used Musclepharm)

1 cup Unsweetened Almond Milk

1 tbsp Chlorophyll (For good health & the green)

1 Frozen Banana

Directions

1In a blender add all ingredients

2Blend until it is at the consistency you want

3Enjoy a guilt free shamrock shake that will make you feel amazing!

Both servings of the shake together are 220 calories 🙂

I love anything involving chocolate and peanut butter and one day I was thinking about these little hemp pb & j bites I had from a healthy grocery store in Macon, GA called Yvonnes. They were AMAZING and ever since then I have wanted to create something similar to those. So one day I was thinking about what I had in my pantry that could create a bite of some kind. I saw oatmeal I said nah played out then I remembered I had quinoa and hemp seeds (another one of my favs) and said let me concoct this so I added quinoa, hemp seeds, cocoa powder, peanut butter, and honey and boom created these little treats. These are amazing you will be tempted to eat the whole batch, they are jam packed full of protein, fiber, and all your essential amino acids so this snack or dessert is great. You must make these ! & Thank you to Yvonne for the inspiration these are nothing like what I had but I created something new 🙂

  • Cook: 3 hrs
  • Yields: 3-4 servings
Fudge & Peanut Butter Quinoa Bites

Ingredients

1 cup Cooked Quinoa (Cooled)

1/4 cup Peanut Butter (Can sub with almond butter)

1/4 cup Honey

1/4 cup Cocoa Powder

2 1/2 tbsp Hemp Seeds

1 tsp Vanilla or Almond Extract

Directions

1Cook quinoa according to box cool and In a medium bowl combine all ingredients

2On a wax paper lined baking sheet create bite-sized pieces out of mixture should be sticking together nicely (you could make these any size even into cookie size)

3Place in freezer for 3 hours then enjoy!

You can make this vegan by using maple syrup instead of honey

Hello! It has been awhile since I have posted but I have a lot of new recipes, articles, and beauty things coming the next few weeks so get ready.

This is a pudding dessert that will blow your socks off and it hides a serving of fruit in it .. Avocado! It is also completely dairy free so win win. When you make this and eat it you will never guess that there is avocado in this. I have to say that this is one of the best things I have ever eaten that is pretty damn healthy. If you love chocolate and dream of creamy chocolate goodness this recipe is for you. This is super simple and takes no more than an hour in total for setting time so make this today you will not regret it.

Ingredients

2 Ripened Avocados

1/2 cup Cocoa Powder

1/4 cup Almond Milk

1/4 cup Honey,Agave, or Maple Syrup

1 oz. Chopped or shaved dark chocolate pieces

Optional - Berries

Directions

1In a food processor place avocado, cocoa powder, almond milk, and honey and blend until creamy (might have to stop it and scrape down sides)

2Once blended place in fridge for at least one hour before serving so it can set

3Garnish with dark chocolate shavings and berries if you would like

4Enjoy!

Baked Falafel

Ingredients

2 Cans of Chickpeas (Drained)

1/4 cup Parsley

1/4 cup Cilantro

1 cup Onion Diced

2 tbsp Lemon Juice4

2 tbsp Olive Oil

2 tsp Baking Powder

1/4 cup Flour (optional I used it)

4 Cloves of Garlic

Salt & Pepper to taste

2 1/2 tsp Cumin

2 1/2 tsp Corriander

1 Packet of Legion of Spice 'This is Sparta' Spice Packk (optional)

Directions

1Pre-Heat oven to 375 degrees

2In a food processor combine all ingredients except for baking powder and flour pulse ingredients together around 12 times

3Add Baking powder and flour and pulse again until combined, scrape down sides I like to make sure everything is combined but leave a bit chunky

4On a baking sheet that is greased with olive oil form into patties or balls and place on the sheet brush the tops with a bit more olive oil

5Bake for 25-30 minutes flipping half way through until golden brown

6Eat alone or serve with tahziki sauce & ENJOY!

Zucchini cakes

Ingredients

2 Zucchinis

1/4 cup Panko Bread Crumbs or Ground Flax

1/2 cup Go Veggie Cheese or Regular Cheese (Cheddar or Monterrey Jack are great in these)

1 tsp Liquid Smoke

1 Egg beat

Salt & Pepper

1 tbsp Garlic Powder

1/2 tbsp Smoked Paprika

1 tbsp Basil

Other Tools Needed

1 Mandolin or Cheese Grader

1 Cheese cloth (to squeeze out water)

1 Strainer

1 Bowl

Directions

To prep Zucchini

1Grade zucchini into shreds and put into cheese cloth wrap it up and squeeze water out

2Squeeze and extract as much water as possible over strainer

Zucchini Cakes

1Pre-Heat oven to 400 degrees (or 420 degrees my oven bakes very warm so I turned it down)

2Take zucchini add to bowl and add bread crumbs,seasonings,liquid smoke, and beaten egg. Combine well then add cheese.

3On a baking sheet that is oiled with olive oil make a patty (I made medium sized ones) and place on sheet. Continue until no zucchini is left.

4Bake for 20 minutes flip once after ten so both sides become golden brown and cripsy.

5Enjoy!

I love nuts they are a great source of protein, tasty, and versatile. Pecans are one of my favorite nuts to munch on I love adding them to cereal and salads as well as alone! This quick and easy recipe is a fast way to turn up some plain pecans. I decided to make a salty instead of totally sweet pecan one day and this recipe was born. Roasting them in the pan makes this quicker and easier as well. I hope you enjoy this pecan recipe and try some different seasoning variations.

  • Cook: 10 mins
  • Yields: 1-2 Servings
South Western Pan Roasted Pecans

Ingredients

2 cups Plain un salted pecans

2 tbsp of Butter

To your taste maple southwestern seasoning (you can find this at most grocery stores also don't go too heavy because it will be too salty)

Directions

1In a medium sautee pan turn to medium high heat and place the pecans warm them up

2Add butter and coat pecans with it then sprinkle some of the seasoning over them and let them continue to cook off in the pan

3Once most of the butter is absorbed drain on a paper towel

Mmm I love a good avocado ! Friends of mine think I'm weird for my love of this fruit but oh well. I made this guacamole for a dinner party & never again will I eat guacamole from anywhere else.( & no I do not put tomato in my Guac but you can add if you want)

  • Prep: 15 mins
  • Yields: 6 Servings

Ingredients

1-2 Avocados

1 tbsp Minced garlic

1 Lime

1/4 cup Chopped fresh cilantro

3 tbsp Red onion or white onion

2 tsp Sea salt

3 tsp Black pepper

Directions

1Cut avocados in half & remove the pits from them

2Take a spoon and scoop the ripe avocado from the shell, take a fork and mash the ingredients together

3Chop Cilantro, Red onion, Garlic and add to avocado

4Roll lime on the cutting board to get the juices flowing then cut the lime and add juice to avocado

5Stir everything until everything is combined but still kind of chunky

6Add salt & pepper and stir together (you can add more lime juice if you would like)

7Let chill in fridge for an hour at least or longer and let the ingredients meld together

This healthy & light dessert will leave you speechless! One of the best things is it is VERY easy to make and VERY satisfying.
Pineapple whip is an easy and super cool dessert, perfect for anytime you are craving sherbert and want something healthy. Also it is perfect for these hot summer days. This recipe is one of my earlier ones (you can tell by the photo lol). Try this easy dessert and let me know what you think in the comments!

  • Prep: 3 hrs
  • Cook: 10 mins
  • Yields: 4 Servings
pineapple whip

Ingredients

1 Whole Fresh pineapple cut into chunks or Could use pre-packaged frozen pineapple

1 cup Almond or soy milk

2 tbsp *Optional Dark Chocolate or Coconut shavings

Directions

13 hrs or more of freezing time for fresh pineapple

2You will need a high-quality food processor since frozen pineapple is very hard and you will need the food processor to blend it nicely ( & do all the work)

3Combine frozen pineapple and almond milk into food processor and start on high checking every minute or so that it is starting to break down into an ice cream like consistency. Use a rubber spoon to scrape sides and stir checking that it is not too loose of a consistency

4After about 5 minutes, it should be at the creamy consistency you see in the photo if it's not pulse for a minute or so more. Lastly, Serve up and enjoy alone or with suggested toppings

Broccoli & Cheddar together is always a win but it's even more a win with this recipe! Broccoli tots are a recipe I have seen many times over but always thought that the recipe was lacking especially seasoning wise so I adapted my own version. These broccoli tots are packing flavor and are now one of my favorite things I have ever made ever! I am seriously addicted and they are so easy I will make them weekly for awhile. The broccoli & cheese tots will be a winner with everybody even picky kids! So try this recipe out & let me know what you think in the comments below.

  • Prep: 25 mins
  • Cook: 20 mins
  • Yields: 4 Servings
Broccoli Tots

Ingredients

3 cups Steamed fresh broccoli

2 tbsp Honey Mustard

Salt & Pepper

2 Cloves of minced garlic

1/4 cup Minced onion

2/3 cup Breadcrumbs

1/2 cup Shredded cheddar cheese

2 Eggs Beaten

Directions

1Pre-Heat oven to 400 degrees steam broccoli let cool them chop finely

2Mix all ingredients together and let cool in refrigerator for 15 minutes

3Shape broccoli mixture into tot form and place on a sheet pan sprayed with non-stick spray or rubbed with olive oil

4Bake in oven for 18 minutes, 9 minutes on each side turning once until golden brown.

Can dip in ketchup or greek yogurt ranch
